Pizza dough (makes 2 servings)
- Whole wheat flour - 3 cups
- Water - 1 1/2 cup
- Olive oil - 3 tsp
- Instant dry yeast - 1 1/2 tsp
- Italian seasoning - 2 tsp
- Cajun seasoning - 2 tsp

- Grilled Cajun chicken thighs - 2 lbs
- Pepperoni - 1/4 lbs
- Mozzarella cheese - 1/2 lbs
- Dubliner cheese - 1/2 lbs
- Italian chopped tomatoes - 1/2 cup
- (optional) Mushrooms - 1 cup
Directions
- Mix yeast with room temp 1/2 cup water (you can add a sprinkle of sugar to help) and let stand for about 5 min
- Mix yeast mixture, 1 cup water, and oil with dough until you can make a ball with it. (Add water/flour as needed)
- Cut dough ball into 2 halves and place in quart Ziploc bags. (I usually put one in the freezer for the next week)
- Let dough rise for 2-4 hours (you should notice that it will expand to fill the whole bag)
- Grill chicken thighs on low setting until cooked thoroughly
- Roll your dough ball to 15in diameter with rolling pin
- Place oil or pepperonis on the bottom of the pan for non-stick effect
- Fold edges of the dough over cheese to get stuffed crust
- Cook dough at 325F for about 10 min (just enough to solidify it
- Add chicken, mushrooms, and tomatoes mixed and spread evenly
- Add thinly sliced cheese over the top of mixture
- Place pepperonis on cheese
- Cook at 325F for about 20-25 min
- Remove from heat and let rest for about 15min
Reflection
This pizza is amazing! Tons of flavor in every bite. You won't want to put it down. It really is such a simple pizza to make as well. This one will be my goto meal when I do not know what else to cook!
