Ingredients
Disclaimer: I don't actually measure ingredients when I cook...
- Cauliflower puree - 3 cups
- Mozzarella Cheese - 2 cups grated
- Dubliner Cheese - half block
- Sliced mushrooms - 1 cup
- Sliced white onion - 1 cup
- Sliced bell pepper - 1 cup
- Crushed pineapple - 1/2 cup
- 3 large eggs
- Basil - 1tsb
- Oregano - 1tsp
- Thyme - tsp
- Alfredo sauce - 16 oz.
Directions
- Mix cauliflower puree with basil, oregano, thyme, eggs, and Mozzarella cheese. (I just threw everything in a food processor)
- Put parchment paper on your pan and spread the puree on the parchment paper.
- Cook puree until the bottom is golden brown. (The temperature and time can vary here depending on how much puree you made)
- While the puree is cooking, cooking the mushrooms, onion, peppers, and pineapple.
- When the crust is ready you can add the sliced Dubliner cheese and let that melt for 5 min.
- Add the mixed veggies on top of the pizza, cook for about 5 min
- Add the Alfredo sauce and cook for about 5 min
- Let pizza cool for about 15 - 20 min (to help solidify the crust)
Reflection
This pizza tasted amazing. I used too much cauliflower, but it still tasted great! I will reduce the amount next time for a better crust.
